Beef Stifado Recipe
2 lbs beef
1 chopped onion
½ cup olive oil
1 lb tomato
1 tbs tomato paste
¼ cup vinegar
3 gloves garlic
¼ cup parsley
Sea salt
Pepper
½ tsp rosemary leaves
2 lb small onion
½ cup butter
Cut beef into cubes. Place in a deep sauce pan and sauté with oil. Add chopped onion and chopped tomatoes. Add vinegar, garlic, and parsley and cover on low for 2 hours. Add salt, pepper, bay leaves, and rosemary leaves. Add onions and butter and sauté around beef. Cover and simmer about 45 minutes more.
