Horiatiki Salad Recipe
4 cups salad greens
4 radishes
1 red onion cut into rings
1-2 tomatoes, cut into wedges
½ cup feta cheese, crumbled
1 tsp sea salt
1 clove garlic
8 kalamata olives
5 anchovy fillets
1 tbs Greek oregano
2 tbs fresh lemon juice
½ cup olive oil
Wash and dry salad greens making them into bite sized pieces as you go. Cut radishes, onions, and tomatoes. Add some salt into a bowl and then crush garlic clove and rub into bowl. Add salad greens, vegetables, cheese, salt, olives, anchovies, and oregano. Sprinkle with lemon juice, salt, pepper, and oil. Toss. Add more lemon juice and oil to taste.
