Spanakopita Recipe

3 lbs frozen copped spinach

2 sticks melted unsalted butter

1 cup green onions chopped

1 onion chopped

1 cup fresh parsley chopped

1 lb feta cheese crumbled

2 cups cottage cheese

1 tsp dill

1 tsp pepper

1 tsp sea salt

½ cup olive oil

1 lb fillo 

3-5 eggs

 

Remove all water from defrosted spinach.  In a big bowl mix spinach, green onions, onions, parsley, feat, cottage cheese, dill, pepper, sea salt, olive oil, and 3-5 eggs.  In a square pan, place 1/3 of the fillo leaves in pan, brushing each with melted butter.  Pour spinach mixture on top.  Cover with remaining fillo leaves, brushing each with melted butter.  Bake 350 degrees for 50-60 minutes.
